Creole Spiced Blue Crabs With Green Onion Dipping Sauce
Whole blue crabs boiled in a spiced court-bouillon, served chilled with a silky green onion and chicken stock dipping sauce.

- 1 gallon water
- 1 each onion, chopped
- 2 each celery stalks, chopped
- 2 each lemons, halved
- 1 each jalapeno, halved
- 1 each garlic head, halved
- 3 each fresh thyme sprigs
- 2 each bay leaves
- 2 tbsp Crab Boil seasoning
- 3 lb blue crabs
- 3 bunch green onions
- 2 tbsp chopped garlic
- 1 quart chicken stock

In a large pot, combine water, onions, celery, lemons, jalapenos, garlic head, thyme, bay leaves, and Crab Boil. Season with salt and pepper. Bring to a boil.

Add blue crabs and cook about 15 minutes. Remove crabs and cool in a bowl of ice water for 5 minutes.

For dipping sauce: In a saucepan, combine green onions, garlic, and chicken stock. Season with salt and pepper. Bring to a simmer. Cook 10 minutes.

Remove sauce from heat. Using a hand-held blender, puree until smooth. Strain through fine mesh strainer. Reseason.

Pile crabs on a platter and serve with the green onion dipping sauce.
