Hot Cross Buns

Traditional spiced sweet buns with currants, topped with a white icing cross — a classic Easter treat.

  • 1 cup scalded milk
  • 0.5 cup butter
  • 0.5 cup sugar
  • 1 tsp salt
  • 1 cake compressed yeast
  • 1 whole egg, well beaten
  • 4 cup sifted all-purpose flour, approximately
  • 0.8 tsp cinnamon
  • 1 cup currants
  • 1 whole egg for brushing
  • 1 tbsp water for egg wash

    Pour scalded milk over butter, sugar, and salt; cool to lukewarm. Add crumbled yeast and let rest 5 minutes.

    Add the egg, flour, and cinnamon to make a soft dough. Fold in currants. Let rise in a warm place (80-85°F) until doubled, about 2 hours.

    Shape into large buns and place 1 inch apart on a buttered baking sheet. Let rise until doubled, about 1 hour.

    Brush tops with 1 egg beaten with 1 tablespoon water. Bake at 400°F for 20 minutes.

    When cool, decorate top of each bun with a cross: beat 1/2 egg white with as much powdered sugar as it will absorb, add 1 teaspoon lemon juice. Spread immediately as it hardens quickly.
