  • 1 medium onion, chopped
  • 1 tbsp olive oil
  • 1 tbsp all-purpose flour
  • 2 0.5 cup chicken or vegetable stock
  • 2 large heads lettuce (green leaves only)
  • 1 bunch fresh spinach
  • 2 bunch watercress
  • 1 cup scalded milk
  • 3 tbsp heavy cream
  • 1 tsp freshly ground black pepper
  • 1 bunch fresh parsley, finely chopped

Instructions

    Wash and tear up the lettuce, spinach, and watercress leaves.

    Sauté onion in olive oil in a large pan until soft.

    Stir in flour and cook for 1 minute.

    Add stock and bring to a boil, stirring regularly.

    Add all the leaves, reduce heat, and simmer for 10 to 15 minutes.

    Remove from heat and purée in batches in a blender until smooth.

    Return to pan, stir in scalded milk and cream. Reheat gently.

    Season with pepper, garnish with parsley, and serve hot or cold.
