Fruit Soup

A refreshing chilled fruit soup blended with banana, peach, cantaloupe, honey, mint, and sour cream — wonderful as a summer first course.

  • 3 cup fruit juice (orange, pineapple, apple, or your choice)
  • 1 whole banana
  • 0.5 tsp dried mint (or fresh equivalent)
  • 1 whole lemon, juiced
  • 1 whole peach, peeled and chopped
  • 1 cup cantaloupe, cubed
  • 2 tsp honey (or to taste)
  • 1 cup sour cream, plain yogurt, or buttermilk
  • 0 optional cinnamon, allspice, or strawberries

Instructions

    Combine all ingredients in a food processor or blender.

    Purée until completely smooth.

    Chill before serving.
