Flambing Pears

Sliced cooking pears caramelized in butter and sugar, then dramatically flambéed with Pear William Brandy and spooned over pound cake ice cream sandwiches with spiced pecans.

  • 3 tbsp butter
  • 1 cup sugar
  • 2 lb cooking pears, cored and sliced 1/4 inch thick
  • 1 pinch salt
  • 1 splash Pear William Brandy
  • 16 slice pound cake, 1/4 inch thick
  • 8 scoops ice cream
  • 1 cup spiced or candied pecan pieces
  • 2 tbsp confectioners' sugar, for dusting

Instructions

    In a large saute pan over medium heat, melt butter. Add sugar. Stir with wooden spoon until it dissolves. Continue stirring until sugar turns caramel color, 4-6 minutes.

    Add pears and a pinch of salt. Continue to saute 4 minutes.

    Remove pan from heat. Carefully add brandy. Return to heat and flambe with an electric kitchen torch. Shake pan until flame dies out.

    Place a scoop of ice cream between two slices of pound cake to form sandwiches.

    Place ice cream sandwiches in center of each plate. Spoon flaming pears over sandwiches. Garnish with pecans and dust with confectioners' sugar.
