Grilled Pineapple And Chicken Salad

- 2 boneless skinless chicken breasts (6 oz each)
- 1 tbsp olive oil
- 1 whole pineapple
- 0.3 cup walnut oil
- 1 tbsp chopped chervil
- 0.5 cup minced celery
- 0.5 cup chopped roasted walnuts
- 1 tsp finely chopped parsley

Preheat the grill. Season chicken with salt, pepper, and olive oil. Grill for 4 minutes per side until cooked through. Let rest, then dice.

Halve the pineapple lengthwise. Using a paring knife, cut around the sides, leaving a 1/4-inch border, and remove the fruit. Reserve the pineapple boats. Core and dice the fruit.

In a bowl, combine the diced chicken, pineapple, walnut oil, chervil, celery, walnuts, and parsley. Toss well and season with salt and pepper.

Fill the pineapple boats with the chicken salad mixture. Serve chilled or at room temperature.
