Curried Chicken

  • 4 chicken leg quarters
  • 2 tbsp vegetable oil
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 0.5 cup water
  • 2 tsp curry powder
  • 1/8 tsp ground cinnamon
  • 0.5 cup chopped onion

Instructions

    Rinse and pat dry chicken. Heat oil in a heavy skillet over medium-high heat. Cook chicken, turning occasionally, for 15 minutes until browned. Remove and keep warm.

    Stir together cream of chicken soup, water, curry powder, cinnamon, and onion into the pan drippings. Heat until simmering.

    Return chicken to the pan; season with salt and pepper.

    Cook covered over medium heat for 15–20 minutes until chicken is cooked through.

    Serve chicken and sauce over hot rice or pasta. Garnish with lemon wedges.
