Gazpacho

- 46 oz large can tomato juice
- 1 cup bread crumbs
- 1 whole green bell pepper
- 1 whole yellow bell pepper
- 1 whole sweet onion
- 4 whole cloves garlic, or more to taste
- 0.5 cup fresh coriander
- 0.3 cup fresh basil
- 2 whole ripe fresh tomatoes
- 1 tsp cumin
- 1 tsp paprika
- 0.5 tsp thyme
- 1 pinch salt and sugar to taste
- 2 whole lemons or limes, juiced
- 1 pinch hot peppers to taste
Instructions

In a blender, purée bread crumbs, garlic, half the green pepper, hot peppers, half the coriander, half the basil, half the tomatoes, all spices, and enough tomato juice to moisten.

Pour into a large bowl.

Add remaining tomato juice, coriander, and basil.

Dice remaining vegetables and stir in.

Let sit in refrigerator for at least 1 hour before serving.
