Gazpacho

Classic Spanish cold tomato soup with peppers, onion, garlic, coriander, basil, and citrus juice — bright, refreshing, and no cooking required.

  • 46 oz large can tomato juice
  • 1 cup bread crumbs
  • 1 whole green bell pepper
  • 1 whole yellow bell pepper
  • 1 whole sweet onion
  • 4 whole cloves garlic, or more to taste
  • 0.5 cup fresh coriander
  • 0.3 cup fresh basil
  • 2 whole ripe fresh tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp thyme
  • 1 pinch salt and sugar to taste
  • 2 whole lemons or limes, juiced
  • 1 pinch hot peppers to taste

Instructions

    In a blender, purée bread crumbs, garlic, half the green pepper, hot peppers, half the coriander, half the basil, half the tomatoes, all spices, and enough tomato juice to moisten.

    Pour into a large bowl.

    Add remaining tomato juice, coriander, and basil.

    Dice remaining vegetables and stir in.

    Let sit in refrigerator for at least 1 hour before serving.
