Emeril's Sausage Pot

A hearty one-pot sausage braise with caramelized onions, bacon, Creole mustard, dark Turbo Dog beer, sauerkraut, and five pounds of assorted sausage.

  • 2 tbsp olive oil
  • 2 each large onions, sliced
  • 2 each thick bacon pieces (1x5 inch), large-diced
  • 0.5 cup Creole mustard
  • 24 oz Turbo Dog beer (2 bottles)
  • 5 each hot dogs
  • 5 lb assorted sausage
  • 2 lb sauerkraut
  • 2 tbsp chopped garlic

Instructions

    In a large pot, add olive oil. Add sliced onions and saute 2 minutes. Add bacon. Season with salt and pepper. Cook 5 minutes until bacon renders and onions begin to caramelize.

    Add Creole mustard and beer. Stir.

    Add half of the sausage. Add sauerkraut on top. Add the rest of the sausage, hot dogs, and garlic.

    Bring to a boil. Reduce to a simmer, cover, and cook 45 minutes.

    Garnish with cracklins, green onions, and Creole seasoning.
