Emeril's Bellini

A refreshing Champagne Bellini made with a homemade frozen peach-sugar syrup thinned to a juice and poured into Champagne flutes.

  • 1 lb frozen peaches, thawed, sliced
  • 1 cup sugar
  • 2 cup water
  • 1 bottle Champagne

Instructions

    In a saucepan over medium heat, combine peaches, sugar, and water. Bring to a boil.

    Reduce to medium-low and simmer 5 minutes. Remove from heat.

    In a blender, puree mixture until smooth. Add enough water to thin the puree into a peach juice consistency.

    Refrigerate until chilled.

    Fill each flute glass 2/3 of the way with Champagne. Add the chilled peach juice and serve.
