Deep Fried Mahi Mahi Macadamia Nut Fingers
Mahi-mahi strips coated in a macadamia nut crust, deep-fried until crispy golden, served with a tropical pineapple-papaya relish.

- 2 cup fresh pineapple, diced
- 3 cup fresh papaya, diced
- 1 tsp chili sauce
- 2 eggs, beaten
- 1 green onion, minced
- 1 tbsp minced garlic
- 1 tbsp minced fresh ginger
- 1 tbsp soy sauce
- 1 tsp sherry
- 1 tsp cornstarch
- 0 to taste salt and freshly ground white pepper
- 3 lb mahi-mahi fillets, cut into 2x3-inch pieces
- 2 cup flour
- 2 cup macadamia nuts, finely chopped
- 0 as needed vegetable oil for frying

Make the fruit relish: Combine the pineapple, papaya and chili sauce. Mix well and set aside.

In a bowl, whisk together the eggs, green onion, garlic, ginger, soy sauce, sherry, cornstarch, salt and pepper to make a marinade.

Add the mahi-mahi pieces and marinate for 10 minutes.

Dredge each piece of fish first in flour, then coat in the finely chopped macadamia nuts.

Heat oil to 375 degrees. Fry the fish in batches for 3-4 minutes until golden and cooked through. Drain on paper towels.

Serve the mahi-mahi fingers with the tropical fruit relish.
