  • 0.5 lb shrimp, peeled, deveined, uncooked
  • 0.5 lb bay or sea scallops
  • 20 oz canned pineapple chunks in juice, drained
  • 1 count green bell pepper, cut in wedges
  • 8 count slices bacon
  • 6 oz barbecue sauce
  • 16 oz salsa
  • 2 tbsp pineapple juice
  • 2 tbsp dry white wine

Instructions

    In a blender, combine barbecue sauce, salsa, pineapple juice, and white wine. Blend until evenly mixed. This is the basting sauce.

    Fold bacon slices and thread onto skewers alternating with pineapple chunks, shrimp, scallops, and bell pepper wedges.

    Baste skewers evenly on all sides.

    Grill over medium-high heat, turning and basting occasionally, until shrimp turn pink and scallops are cooked through.

    Serve immediately with steamed rice.
