Peanut Butter Soup
A rich, creamy West African–inspired soup made with peanut butter, chicken broth, and vegetables, garnished with chopped peanuts.

- 2 whole onions, chopped
- 2 stalks celery, chopped
- 1 whole green bell pepper, chopped
- 2 clove garlic, minced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 4 cup chicken broth
- 1 cup milk
- 1 cup half-and-half
- 1 cup peanut butter
- 2 tbsp tomato paste (optional)
- 1 tbsp soy sauce
- 0.5 cup chopped peanuts, for garnish

Melt butter in a large pot over medium heat. Sauté onions, celery, green pepper, and garlic until softened.

Stir in flour and cook for 2 minutes.

Gradually whisk in chicken broth until smooth.

Add milk and half-and-half; stir to combine.

Stir in peanut butter until fully incorporated and smooth.

Add tomato paste and soy sauce if using.
