Papaya Garlic Shrimp
Shrimp sautéed with garlic, onion, and fresh papaya with thyme — served over rice or Thai noodles.

- 3 tbsp butter, divided
- 2 clove garlic, chopped (not crushed)
- 0.5 whole Spanish onion, chopped
- 0.5 whole papaya, cut into 1/2-inch chunks
- 1 tsp dried thyme leaves
- 1 lb shrimp, peeled and deveined

In a saucepan, melt 2 tbsp butter. Sauté chopped garlic and onion until garlic has browned and onion has cleared.

Add papaya chunks and dried thyme. Stir until papaya just starts to go mushy. Remove to a bowl.

In the same pan, sauté shrimp in remaining 1 tbsp butter for 2 minutes.

Return the papaya-garlic-onion mixture to the pan; cook on low heat for 5 more minutes. Serve over rice or Thai noodles.
