Orange Blush Lobster Salad

- 2 lb cooked lobster meat
- 3 cup cantaloupe balls
- 1 papaya papaya (about 1.25 lbs), cut in 1/2-inch dice
- 6 plum tomatoes plum tomatoes, seeded and diced
- 1 tbsp freshly minced ginger
- 0.3 cup fresh orange juice
- 2 tbsp red wine vinegar
- 1 tsp Dijon-style mustard
- 0.5 cup extra-virgin olive oil
- 1 tsp finely grated orange zest
- 0.3 cup freshly snipped chives
- 2 head radicchio, for garnish

Place the lobster, cantaloupe, papaya, tomatoes, and ginger in a large bowl. Gently fold together with a rubber spatula. Set aside.

In a small bowl, combine orange juice, vinegar, mustard, salt, and pepper.

Whisking constantly, slowly drizzle in the olive oil until the dressing thickens slightly. Stir in orange zest.

Shortly before serving, toss 1/2 cup of dressing with chives and the lobster mixture.

Serve on a platter surrounded by radicchio leaves or place portions inside the leaves.

Serve remaining dressing on the side.
