Olive And Garlic Pretzels

Homemade soft pretzels packed with olives and garlic, boiled then baked for an authentic chewy-crunchy texture.

  • 1 envelope active dry yeast
  • 1 tsp sugar
  • 1 0.5 cup warm water, 110 degrees
  • 4 cup all-purpose flour
  • 1 tsp salt
  • 0.5 cup sliced black olives
  • 3 tbsp minced garlic
  • 0.3 cup baking soda for boiling
  • 2 tbsp coarse salt for topping

Instructions

    Dissolve yeast and sugar in warm water. Let stand 5 minutes until foamy.

    Mix in flour and salt to form a dough. Knead in the olives and garlic. Knead on a floured surface for 8-10 minutes until smooth and elastic.

    Place in an oiled bowl, cover and let rise 1 hour.

    Preheat oven to 450 degrees. Bring a large pot of water to boil and add baking soda.

    Divide dough into 12 pieces. Roll each into a long rope and shape into a pretzel. Boil in batches for 30 seconds per side. Drain.

    Place on a parchment-lined baking sheet, sprinkle with coarse salt, and bake for 12-15 minutes until deep golden brown.
