Malibu Stir Fry Shrimp

  • 1 tbsp peanut oil
  • 1 tbsp butter
  • 1 tbsp minced garlic
  • 1 lb medium shrimp, shelled and deveined
  • 1 cup sliced mushrooms
  • 1 bunch scallions, sliced
  • 1 count red sweet pepper, seeded and cut into thin 2-inch strips
  • 1 cup fresh or frozen peas
  • 1 cup Malibu rum
  • 1 cup heavy cream
  • 0.3 cup chopped fresh basil
  • 2 tsp ground chili paste
  • 0.5 count lime, juiced
  • 0.5 cup shredded coconut
  • 1 lb fettuccini, cooked

Instructions

    Heat peanut oil and butter over high heat in a large skillet or wok.

    Add minced garlic and stir-fry for 1 minute.

    Add shrimp and cook 2 minutes until they turn pink.

    Add mushrooms, scallions, red pepper, and peas. Stir-fry for 2 more minutes.

    Add Malibu rum and simmer 2 minutes.

    Add heavy cream and simmer 5 minutes until sauce reduces slightly.

    Stir in chili paste, lime juice, and fresh basil. Season with fresh ground black pepper.

    Toss with shredded coconut and the cooked fettuccini. Serve immediately.
