Pickled Herring Casserole

A Scandinavian-style baked casserole of layered pickled herring, Idaho potatoes, and onions topped with a Parmesan bread crumb crust and milk-moistened throughout.

  • 1 tbsp butter
  • 1 cup fine dried bread crumbs
  • 1 tbsp finely chopped fresh parsley leaves
  • 2 oz grated Parmigiano-Reggiano cheese
  • 1 lb Idaho potatoes, peeled and sliced 1/4-inch thick
  • 2 cup thinly sliced onions
  • 2 tbsp flour
  • 6 fillets pickled herring
  • 1 0.5 cup milk

Instructions

    Preheat oven to 400°F. Grease a glass baking dish with butter.

    In a small bowl, combine bread crumbs, parsley, and cheese. Season with salt and pepper and mix well.

    Season the potato and onion slices with salt and pepper.

    Place a layer of potatoes on the bottom of the dish. Top with a layer of onions. Sprinkle 1 tablespoon flour over the onions. Lay half the herring over the onions.

    Repeat the layering with remaining potatoes, onions, flour, and herring. Pour milk over everything.

    Sprinkle the bread crumb mixture evenly over the top. Bake for about 40 minutes until potatoes are tender and the top is golden.
