Overnight Herb and Beer Shrimp

  • 2 lb peeled raw shrimp
  • 1 0.5 cup dark beer
  • 2 count cloves garlic, minced
  • 2 tbsp fresh chives, snipped
  • 2 tbsp fresh parsley, snipped
  • 1 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 cup shredded lettuce for serving
  • 2 count green onions, finely chopped

Instructions

    Combine shrimp, beer, minced garlic, chives, parsley, salt, and pepper in a large bowl. Stir to coat shrimp well.

    Cover and refrigerate overnight, stirring occasionally.

    When ready to cook, drain shrimp and reserve the marinade.

    Preheat broiler. Arrange shrimp on a broiler pan and broil 4 inches from the heat for about 2 minutes per side, brushing occasionally with the reserved marinade. Do not overcook.

    Serve shrimp on a bed of shredded lettuce, sprinkled with chopped green onion.
