Lemongrass Shrimp Soup

  • 16 large shrimp, peeled and deveined
  • 8 cup chicken stock
  • 6 stalks lemongrass
  • 1 cup snow peas
  • 1 can straw mushrooms
  • 1/3 cup shredded carrots
  • 1 fresh chili pepper, cut into rings
  • 4 tbsp fish sauce (nam pla)
  • 1 lime, juiced
  • 0.5 bunch fresh cilantro
  • 0.5 tsp crushed red pepper

Instructions

    Bring stock to a simmer. Add crushed red pepper and shrimp; simmer 5 minutes.

    Add lemongrass and simmer 5 more minutes.

    Add snow peas, mushrooms, carrots, chili, fish sauce, lime juice, and cilantro.

    Simmer a few minutes more until vegetables are crisp-tender. Serve hot.
