Stir-Fried Crabmeat With Cellophane Noodles

- 3 0.5 oz cellophane (glass) noodles
- 2 tbsp vegetable oil
- 2 tbsp chopped shallots
- 1 cup thinly sliced snow peas
- 1 oz dried tree ear mushrooms, reconstituted in water
- 2 tsp chopped garlic
- 1 cup bean sprouts
- 2 tbsp fish sauce (nuoc mam), or to taste
- 0.3 tsp freshly ground black pepper
- 0.5 lb fresh crabmeat, picked over for cartilage
- 0.3 cup chopped green onions

Place the cellophane noodles in a large bowl. Cover with warm water and soak for 20 minutes. Drain and pat dry.

Heat a wok over medium-high. Add the vegetable oil. When hot, add the shallots, snow peas, reconstituted mushrooms, garlic, and bean sprouts. Season with fish sauce and black pepper. Stir-fry for 1 minute.

Add the crabmeat; season again with fish sauce and pepper. Stir-fry for 2 minutes.

Add the drained noodles and green onions. Stir-fry for 1 final minute until everything is heated through and combined.

Remove and serve on a large platter.
