Shrimp Chowed with Garlic

- 1 0.5 lb large shrimp, peeled and deveined
- 3 tbsp peanut oil
- 1 tsp salt
- 5 count cloves garlic, thinly sliced
- 3 count scallions, chopped
- 2 tsp sesame oil
- 1 tbsp dry sherry
Instructions

Heat a large cast iron skillet over the highest heat until very hot.

Add peanut oil, salt, and sliced garlic. Toss for just a few seconds.

Add shrimp and toss constantly until they all change to a bright orange color.

Throw in the chopped scallions and sesame oil and toss for a few more seconds.

Add dry sherry, then cover the pan and immediately turn off the heat.

Serve immediately — the residual heat will finish cooking the shrimp perfectly.
