Lemon Roast Chicken
A whole chicken browned then slow-cooked with oregano, garlic, butter, and lemon juice for 8 hours — simple, fragrant, and fall-off-the-bone tender.

- 1 whole chicken, rinsed and patted dry
- 1 dash salt and pepper
- 1 tsp dried oregano, divided
- 2 clove garlic, minced, divided
- 2 tbsp butter
- 0.3 cup water
- 3 tbsp fresh lemon juice

Season chicken with salt and pepper. Sprinkle half the oregano and garlic inside cavity.

Melt butter in a large frying pan. Brown chicken on all sides.

Transfer to slow cooker. Sprinkle with remaining oregano and garlic.

Add water to frying pan, stir to loosen drippings, pour into slow cooker.

Cover and cook on LOW for 8 hours, adding lemon juice in the last hour. Carve and serve with pan juices.
