Chicken Pate

  • 3 boneless, skinless chicken breasts
  • 0.5 cup onion, finely chopped
  • 8 oz whipped cream cheese
  • 0.3 cup mayonnaise
  • 0.5 tsp paprika
  • 0.3 cup sherry
  • 0.5 tsp cayenne pepper
  • 1 lemon, juiced

Instructions

    Cook chicken breasts in boiling water for 30–45 minutes until fully cooked. Remove and let cool.

    Cut cooled chicken into cubes.

    In a medium bowl, combine chicken with onion, cream cheese, mayonnaise, paprika, sherry, cayenne, and lemon juice. Mix well.

    Lightly oil a small loaf pan or jello mold. Spoon the mixture in and press down.

    Refrigerate for at least 8 hours until set.

    Unmold and serve with crackers.
