Jarlsberg Cheese and Broccoli Soup

A creamy, elegant broccoli soup with leeks, mushrooms, and rich Jarlsberg cheese melted in at the end.

  • 1 cup chopped leek
  • 1 0.5 cup mushrooms, chopped
  • 2 tbsp margarine
  • 1 tbsp flour
  • 3 cup chicken broth
  • 1 bunch broccoli, in florets
  • 1 pint half and half
  • 1 cup shredded Jarlsberg cheese

Instructions

    Sauté leek and mushrooms in margarine until tender. Add flour and heat one minute more until bubbly.

    Stir in broth until thick. When heated, add broccoli.

    Simmer 20 minutes until tender.

    Add half and half (less if desired) and Jarlsberg cheese.

    Stir until all cheese is melted. Serve with a good loaf of French bread.
