Mint Jelly

  • 0 cup packed fresh mint, washed
  • 0 cup water
  • 0.5 tsp lemon juice
  • 1 each (1 3/4 ounce) box Sure-Jell®
  • 4 cup granulated sugar

Instructions

    Crush mint leaves and stems.

    Bring to a boil.

  3. 3

    Remove from heat, cover and let stand 10 minutes.

    Strain and measure 3 cups of mint infusion.

  5. 5

    Add food coloring and lemon juice.

  6. 6

    Add Sure-Jell®, dissolve and bring to a rapid boil.

  7. 7

    Cook fast, stirring occasionally until it comes to a rapid boil that cannot be stirred down; then cook 1 minute more.

    Pour into sterilized jelly glasses and seal.

    Yields 6 half pints.
