Ham Croquettes

- 4 tbsp butter
- 0.5 cup finely minced onions
- 0.3 cup all-purpose flour, plus 2 tbsp
- 1 0.5 cup whole milk
- 0.3 tsp nutmeg
- 1 tbsp finely chopped parsley
- 1 tbsp dry sherry
- 12 oz ground smoked ham
- 2 eggs, beaten with 1 tbsp water
- 1 cup dry bread crumbs

In a large sauté pan, melt the butter. Add onions and sauté for 2 minutes until soft and translucent. Season with salt and pepper.

Stir in the flour to make a roux. Cook for 1 minute, then remove from heat. Whisk in the milk to form a smooth sauce. Return to medium heat and cook, stirring, until very thick.

Stir in nutmeg, parsley, sherry, and ground ham. Spread mixture into a baking dish and refrigerate for at least 1 hour until firm.

Shape chilled mixture into small cylinders or balls. Dip in beaten egg, then roll in bread crumbs to coat.

Fry in 350°F oil in batches until golden-brown, about 3 to 4 minutes. Drain on paper towels, season with salt, and serve hot.
