Tasso Maque Choux

- 1 tbsp olive oil
- 4 oz Tasso ham, diced
- 1 cup chopped yellow onions
- 6 ears sweet corn, kernels scraped from the cob
- 1 tbsp chopped garlic
- 0.5 cup chopped green bell peppers
- 1 0.5 tsp salt
- 0.3 tsp cayenne pepper
- 1 cup fresh tomatoes, peeled, seeded, and chopped
- 1 cup heavy cream
- 1 cup fresh parsley, chopped

In a large skillet over medium heat, heat the olive oil. Render the Tasso for 2 to 3 minutes.

Add the onions, corn kernels, garlic, and bell peppers. Cook, stirring occasionally, for 10 minutes.

Season with salt and cayenne. Add the tomatoes and cook, stirring occasionally, for 15 to 18 minutes until the corn is very tender.

Stir in the cream and bring to a simmer. Cook for 2 to 3 minutes until the sauce coats the back of a spoon. Re-season if needed.

Stir in the fresh parsley and serve as a side dish or over rice.
