Grilled Salmon

Whole salmon stuffed with vegetables and herbs, wrapped in foil and grilled with butter and lemon.

  • 6 lb whole salmon, cleaned
  • 1 tsp salt, to taste
  • 0.5 tsp pepper, to taste
  • 2 cup chopped mushrooms
  • 1 cup chopped green onions
  • 2 tbsp minced parsley
  • 0.5 cup Parmesan cheese, grated
  • 1 whole lemon, grated peel and juice
  • 0.5 cup butter or margarine, melted
  • 4 whole lemon slices

Instructions

    Place salmon on a double layer of wide foil (3-4 inches longer at each end). Sprinkle inside and out with salt and pepper.

    Combine mushrooms, green onions, parsley, Parmesan, lemon peel, and juice. Spoon into fish cavity.

    Pour butter over fish and top with lemon slices. Seal foil completely. Place on grill 4-6 inches from coals.

    Turn after 30 minutes and grill 20-30 minutes longer. For smoke flavor, open foil for last 10 minutes. Serve with choice of sauces. Makes 10-12 servings.
