Danish Blue Lobster Casserole

- 3 tbsp butter
- 1 lb raw lobster meat, cut into bite-size pieces
- 3 tbsp all-purpose flour
- 0.8 tsp dry mustard
- 1 cup heavy cream
- 0.5 cup milk
- 3 slice white bread, crusts removed
- 0.5 cup Danish blue cheese, crumbled

Preheat oven to 350°F. Lightly grease a 2-quart baking dish.

Melt butter in a pot over low heat. Gently sauté lobster meat until it just starts to change color. Remove with slotted spoon and set aside.

To the butter remaining in the pot, stir in flour, dry mustard, salt, and pepper.

Gradually whisk in cream and milk. Cook, stirring constantly, until thickened, about 5 minutes.

Return lobster to sauce. Transfer to prepared baking dish.

Crumble bread over top; sprinkle with blue cheese crumbles.

Bake at 350°F for 20 minutes until golden and bubbly.
