Garlic Rum Shrimp

  • 3 lb large shrimp, peeled and deveined
  • 0.5 cup light rum
  • 1 count lime, juiced
  • 1 tbsp Worcestershire sauce
  • 0.5 tsp ground cumin
  • 0.3 cup unsalted butter
  • 0.5 cup Spanish olive oil
  • 5 clove garlic, finely chopped
  • 0.3 cup fresh breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp salt
  • 0.3 tsp Tabasco sauce

Instructions

    Season shrimp with salt and Tabasco.

    Mix rum, lime juice, Worcestershire, and cumin. Toss with shrimp; refrigerate and marinate at least 1 hour.

    In a small saucepan, heat butter and olive oil together. When butter is foamy, add garlic and sauté 2 minutes. Remove from heat.

    Arrange marinated shrimp in a single layer in a shallow broiler pan. Pour garlic sauce over shrimp and sprinkle with breadcrumbs.

    Broil until shrimp are pink and breadcrumbs are golden, about 8–10 minutes.

    Garnish with fresh parsley. Serve over rice or with crusty bread.
