Spicy Salmon and Eggplant

  • 3 steaks fresh salmon steaks
  • 1 large eggplant
  • 3 limes juice only
  • 2 lemons juice only
  • 1/8 cup olive oil
  • 1 tsp Greek or Italian seasoning
  • 1/8 tsp hot red pepper flakes
  • 1 pinch fresh ground black pepper

Instructions

    Remove stem and end of eggplant and slice diagonally into 1/4-inch thick slices.

    Place salmon steaks and eggplant slices in a large flat container. Squeeze the lime and lemon juice into a separate bowl. Stir in olive oil, Italian seasoning, pepper flakes, and ground pepper. Pour over the fish and eggplant. Cover and marinate in the refrigerator for 1 to 1-1/2 hours, turning once for even marinating.

    Place salmon steaks on a hot grill and cook on both sides until done. When fish is half cooked, add eggplant slices to the grill. Grill eggplant on both sides until tender and charred.

    Remove and serve fish and grilled vegetables together with rice.
