Callaloo Soup

- 1 large crab, cleaned and cracked
- 2 cup okra, sliced
- 4 cup callaloo leaves or fresh spinach, roughly chopped
- 1 cup coconut milk
- 2 tbsp groundnut oil or vegetable oil
- 3 garlic cloves, minced
- 1 onion, chopped
- 4 spring onions, sliced
- 0.5 tsp Tabasco sauce
- 1 tsp fresh thyme leaves
- 4 cup water or light chicken stock
- 1 tsp salt, or to taste

Heat the oil in a large pot over medium heat. Sauté the onion, spring onions, and garlic for 3 minutes until softened.

Add the crab pieces and cook, stirring, for 3–4 minutes.

Add the water or stock, thyme, and Tabasco. Bring to a boil.

Add the okra and callaloo or spinach. Reduce heat and simmer for 15 minutes.

Stir in the coconut milk and season with salt. Simmer gently for another 10 minutes.

Taste and adjust seasoning. Serve hot in deep bowls.
