  • 0 lb fully ripened figs
  • 0.5 cup lemon juice
  • 1 tsp grated lemon rind
  • 0.5 cup water
  • 1 each (1 3/4 ounce) box Sure-Jell®
  • 0 cup granulated sugar

Instructions

    Trim stems, grind figs and place in large saucepan.

    Stir in lemon juice, grated lemon rind and water.

  3. 3

    Add Sure-Jell®.

  4. 4

    Place figs over high heat until a hard boil is reached.

  5. 5

    Immediately add all sugar.

  6. 6

    Let come to a quick rolling boil that will not stir down.

    Boil hard for one minute, stirring constantly.

  8. 8

    Remove from heat and skim with metal spoon.

  9. 9

    Stir and skim for 5 minutes.

    Ladle into jelly glasses leaving 1/2 inch space at top.

    Cover with hot melted paraffin or seal with tops.

    Yields 12 half pints.
