Emeril's Pork Dumplings With Spicy Sauce

  • 0.5 lb ground pork
  • 1 tbsp chopped garlic
  • 2 tbsp chopped green onions
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 0.3 cup heavy cream
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 16 each wonton wrappers
  • 4 each Napa cabbage leaves for steaming
  • 3 tbsp soy sauce (for serving)
  • 2 tsp Asian chili oil (for serving)

Instructions

    In a food processor fitted with a metal blade, combine the pork, garlic, and green onions. Purée until smooth.

    Season with a drizzle of sesame oil and soy sauce. Add the cream and process until incorporated. Season with salt and pepper.

    Using a round biscuit cutter, cut the wonton wrappers into 2½-inch circles. Place 2 tablespoons of filling in the center of each circle.

    Moisten the edges with water. Pleat half the circle and press the edges together to form a crescent. Then pleat around the dumpling and press to form a beggar's purse shape.

    Line a large steamer basket with cabbage leaves. Place the steamer in a wok with enough water to touch the bottom of the basket. Cover and steam the cabbage for 2 minutes.

    Arrange the dumplings on the cabbage leaves. Cover and steam until cooked through and translucent, about 6 to 8 minutes.

    Serve warm with soy sauce and chili oil for dipping.
