Oriental Pork with Noodles

- 1 0.5 lb pork fillet, thinly sliced
- 1 tbsp Sichuan peppercorns, crushed
- 2 tsp sesame oil
- 2 tsp sunflower oil
- 2 tbsp fresh ginger, grated
- 2 red chillies, deseeded and chopped
- 4 0.4 oz oyster mushrooms, ripped
- 4 0.4 oz shiitake mushrooms, halved
- 1 red bell pepper, deseeded and chopped
- 1 bunch spring onions, sliced
- 7 oz pak choi, washed and chopped
- 2 cloves garlic, finely chopped
- 10 0.6 oz bean sprouts
- 10 0.6 oz medium egg noodles, cooked
- 2 tsp fish sauce
- 6 tbsp oyster sauce
- 6 tbsp chicken stock
- 0.5 oz fresh coriander, chopped

Prepare all ingredients before you start — this dish cooks fast. Rub the crushed Sichuan peppercorns into the pork slices.

Heat a wok and a frying pan to maximum heat. Add the sesame and sunflower oils to the hot wok. Fry the ginger, chilli and mushrooms for 1 minute until slightly colored.

Throw in the pepper, spring onions, pak choi, garlic and bean sprouts. Stir-fry for 2 minutes.

Simultaneously, cook the pork in the hot frying pan — it will cook very quickly. Add to the wok.

Add fish sauce, oyster sauce and chicken stock. Toss in the cooked noodles and stir everything together until hot.

Garnish with fresh coriander and dark soy sauce to taste. Serve immediately.
