Emeril's Stuffed Fried Rice

- 0.3 cup peanut oil
- 3 cup cooked white rice
- 0.5 cup chopped green onions
- 0.5 cup shredded roasted pork
- 0.5 cup diced cooked shrimp
- 0.5 cup diced Chinese sausage
- 2 tsp minced garlic
- 3 each eggs
- 1 0.5 tbsp soy sauce
- 2 tbsp sesame oil
- 3 tbsp finely chopped parsley
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1 head Bibb lettuce, leaves separated
- 3 tbsp soy sauce for dipping

Heat the peanut oil in a wok over high heat. Add the rice and toss until hot and golden.

Add the green onions, roasted pork, shrimp, and Chinese sausage. Stir-fry for 1 minute.

Stir in the garlic, eggs, soy sauce, sesame oil, and parsley. Stir-fry for 2 minutes.

Season with salt and pepper.

Remove from the wok. Place 2 heaping spoonfuls of fried rice in the center of each Bibb lettuce leaf. Tuck the sides in and roll tightly like a jelly roll.

Serve with soy sauce for dipping.
