Emeril's Kugel
A rich egg noodle kugel with cottage cheese, sour cream, and vanilla custard, topped with a crunchy brown sugar-pecan-cinnamon streusel.

- 1 lb wide egg noodles
- 4 tbsp butter
- 1 lb cottage cheese
- 2 cup sour cream
- 0.5 cup sugar
- 1 cup milk
- 5 each eggs
- 2 tsp pure vanilla extract
- 1 cup light brown sugar
- 2 cup pecan pieces
- 1 tsp cinnamon

Preheat oven to 350°F. Bring a pot of salted water to a boil. Cook noodles until tender, 6-8 minutes. Drain. Toss noodles with butter.

In a large mixing bowl, mix cottage cheese, sour cream, sugar, milk, eggs, and vanilla. Mix well. Fold in noodles.

Pour mixture into a buttered 9x13-inch pan.

In a small bowl, mix brown sugar, pecan pieces, and cinnamon. Sprinkle evenly over the noodle mixture.
