Lentil and Brown Rice Soup

A hearty, easy vegetarian soup of lentils, brown rice, vegetables, and herbs seasoned with apple cider vinegar.

  • 1 envelope onion soup mix
  • 4 0.5 cup water
  • 0.8 cup dry lentils, rinsed and drained
  • 0.5 cup uncooked brown rice
  • 1 can coarsely chopped whole peeled tomatoes, undrained
  • 1 medium carrot, coarsely chopped
  • 1 large stalk celery, coarsely chopped
  • 0.5 tsp basil leaves
  • 0.5 tsp oregano
  • 0.3 tsp thyme leaves
  • 1 tbsp finely chopped parsley
  • 1 tbsp apple cider vinegar
  • 0.3 tsp pepper

Instructions

    In a large saucepan, combine onion soup mix, water, lentils, rice, tomatoes, carrot, celery, oregano, thyme, and basil.

    Bring mixture to a boil, then simmer covered, stirring occasionally, for 45 minutes or until lentils and rice are tender.

    Stir in parsley, vinegar, and pepper and serve. Great with rye bread.
