Country Ribs with Apples and Kraut

- 3 lb country-style pork ribs, excess fat trimmed
- 1 tsp salt
- 0.5 tsp black pepper
- 16 oz sauerkraut, undrained
- 1 medium onion, thinly sliced into rings
- 8 oz canned mushroom stems and pieces, drained
- 1 large apple, cored and cut into wedges
- 0.3 cup brown sugar
- 0.5 tsp celery seed
Instructions

Brown ribs in the slow cooker pot or a skillet over medium heat. Season with salt and pepper.

Transfer to slow cooker if using a separate skillet.

Layer sauerkraut, onion rings, mushrooms, and apple wedges over ribs.

Sprinkle brown sugar and celery seed over the top.

Cover and cook on LOW for 7–9 hours, or HIGH for 3–4 hours, until ribs are very tender.

Serve ribs with sauerkraut and apples, with mashed potatoes or rye bread.
