Oven Goulash

A simple oven-baked goulash of ground beef, macaroni, canned tomatoes, and sweet corn. Quick to assemble and satisfying comfort food.

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 17 oz canned diced tomatoes
  • 15 oz canned whole-kernel corn
  • 2 cup macaroni
  • 1 to taste salt and pepper
  • 0.5 cup shredded cheese (optional topping)

Instructions

    Preheat oven to 350°F. Cook macaroni and drain.

    Brown beef with onions and green peppers. Drain fat.

    Add tomatoes and corn. Cook until heated well.

    Add drained macaroni to beef mixture. Season with salt and pepper. Pour into baking pan.

    Bake for 15 minutes. Sprinkle with cheese and return to oven to melt if desired.
