Potato Goulash
Easy one-dish potato and ground beef casserole using scalloped potato mix with celery and plum tomatoes. Everything bakes together for an effortless weeknight dinner.

- 1 package Betty Crocker scalloped potatoes
- 1 lb ground beef
- 0.3 tsp salt
- 1 cup sliced celery
- 16 oz canned whole plum tomatoes with liquid

Preheat oven to 400°F. Place potato slices into ungreased 2-quart casserole dish; set aside.

Brown ground beef with salt until cooked through; drain excess fat.

Stir in sauce mix from potato packet, water (per packet), celery and tomatoes with their liquid; mix well, breaking up tomatoes.

Bring to a boil, stirring frequently. Pour over potatoes, stirring to combine.

Cover and bake until potatoes are tender, 35-40 minutes.
