Mom's Vegetable Soup

Simple creamy vegetable soup of onion, cabbage, potato, and rice — puréed and finished with milk and a touch of vinegar. No broth needed.

  • 1 whole large onion
  • 0.5 whole head of cabbage
  • 2 whole small potatoes (or 1 large)
  • 2 tbsp uncooked rice
  • 1 cup milk, to taste
  • 1 pinch salt to taste
  • 1 dash vinegar

Instructions

    Wash and cut vegetables into large chunks. Place in a pressure cooker with the rice and cover with about 2 cups of water.

    Cook for up to 3 whistles (about 10 minutes). Alternatively, boil in a regular pot for 3-4 hours.

    Let cool. Purée the entire contents in a blender, then run through a sieve.

    When warm (not hot), stir in milk and heat gently. Add salt to taste.

    Before serving, stir in a few drops of vinegar.
