Zucchini Soup

A simple, creamy blended German zucchini soup with tomatoes, vegetable broth, and fresh herbs.

  • 6 0.3 cup vegetable broth
  • 8 cup zucchini, diced
  • 2 whole tomatoes, chopped
  • 0 to taste salt and pepper
  • 0 to taste fresh parsley and sage
  • 1 clove garlic

Instructions

    Place zucchini and tomatoes in a large pot with the vegetable broth.

    Bring to a boil and simmer until very well cooked, about 20 minutes.
