John Wayne Casserole

- 8 oz canned diced green chiles
- 1 lb Monterey Jack cheese, coarsely grated
- 1 lb Cheddar cheese, coarsely grated
- 0.8 cup evaporated milk
- 4 eggs, separated
- 1 tbsp flour
- 0.5 tsp salt
- 1/8 tsp black pepper
- 2 tomatoes, thinly sliced

Preheat oven to 325°F.

Mix green chiles and both grated cheeses together. Place in a buttered shallow casserole.

In a bowl, combine evaporated milk, egg yolks, flour, salt, and pepper.

In a large bowl, beat egg whites to stiff peaks. Gently fold whites into the yolk mixture.

Pour egg mixture over the cheese and blend carefully. Bake for 30 minutes.

Remove from oven, lay tomato slices over the entire top, and return to oven. Bake 30 more minutes until a knife inserted in center comes out clean.
