Jerk Shrimp with Sweet Jamaican Rice

- 1 lb medium raw shrimp (51-60 count), shell on
- 3 tbsp jerk seasoning marinade
- 2 cup hot cooked white rice
- 11 oz mandarin oranges (1 can), drained and chopped
- 8 oz crushed pineapple (1 can), drained
- 0.5 cup red bell pepper, chopped
- 0.3 cup slivered almonds, toasted
- 0.5 cup scallions, sliced
- 2 tbsp flaked coconut, toasted
- 0.3 tsp ground ginger

Peel and devein the shrimp, leaving the tails on. Place in a bowl with the jerk marinade and coat thoroughly. Marinate while preparing the rice.

In a large skillet, combine the cooked rice, mandarin oranges, pineapple, red bell pepper, toasted almonds, scallions, toasted coconut, and ground ginger. Cook over medium-high heat, stirring constantly, for 5 minutes until thoroughly heated. Remove from heat.

Arrange the marinated shrimp in a single layer in a broiler pan.

Broil 5 to 6 inches from the heat for 2 minutes. Stir and broil an additional 2 minutes until the shrimp are just pink and cooked through.

Serve the jerk shrimp over the sweet Jamaican rice.
