  • 1 tbsp vegetable oil
  • 0.5 lb dried Spanish chorizo sausage, finely chopped
  • 2 cup chopped onions
  • 1 small chili pepper, finely minced
  • 2 tbsp chopped garlic
  • 1 lb dried black beans
  • 10 cup chicken stock
  • 1 tbsp butter

Instructions

    In a large saucepan over medium heat, heat the oil. Add the chorizo and brown for 2 minutes.

    Add the onions and chili pepper. Season with salt and pepper; sauté for 3 to 4 minutes until wilted.

    Stir in the garlic and black beans; sauté for 1 minute.

    Add the chicken stock. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beans are very tender.

    Stir in the butter. Adjust seasoning and serve as a side dish with rice.
