- 4 lb lean hamburger
- 0.3 cup mild curing salt
- 1 0.5 tsp garlic powder
- 2 tsp coarse black pepper
- 2 tbsp red wine

MIX all ingredients well. REFRIGERATE for 24-hours. ADD: 2 teaspoons chili powder 2 teaspoons crushed red pepper or pepper corns 1 teaspoon cumin 1 teaspoon basil 1 teaspoon oregano

3 tablespoons red wine MIX all ingredients well. ROLL, or form, into small rolls. BAKE at 225°F for 4 hours.
