Irish Soda Bread

- 3 cup all-purpose flour
- 0.5 tsp baking soda
- 2 tbsp white sugar
- 0.5 cup raisins
- 1 whole egg, beaten
- 1 cup buttermilk
- 2 tbsp margarine, melted

Preheat oven to 350°F. Grease a cast iron skillet.

In a medium bowl, mix together flour, baking soda, and sugar. Toss raisins with the flour mixture until coated.

Make a well in the center and add egg, buttermilk, and melted margarine. Stir until all dry ingredients are absorbed.

Turn dough onto a floured surface and knead a few quick turns just to even out the dough. Handle as little as possible. Pat into a flat circle.

Place in the prepared pan and bake 40-45 minutes until edges are golden.
