Oatmeal Soda Bread

  • 1 0.3 cup rolled oats
  • 1 cup buttermilk
  • 1 0.3 cup all-purpose flour
  • 0.5 tsp salt
  • 0.5 tsp baking soda
  • 0.3 tsp butter, for greasing
  • 2 tbsp extra flour, for dusting

    Pulse the rolled oats in a food processor until very fine. Transfer to a mixing bowl, stir in the buttermilk, cover, and let steep for 12 hours (or overnight) in the refrigerator.

    Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan with butter. Sift the flour, salt, and baking soda together into a mixing bowl. Stir in the steeped oatmeal mixture and mix until a soft, slightly sticky dough forms. Add a little more flour if it's too wet.

    Turn the dough onto a lightly floured surface. Knead a couple of times to form a soft ball. Press into a round about 2 inches thick. Score a deep cross on top with a sharp knife.

    Place in the prepared pan and bake until golden brown, about 25 to 30 minutes. Remove and cool on a wire rack. Serve warm with butter.
